My “Carb-Killing” 10-Minute Lunch!
Why does it kill carbohydrate cravings? ‘Cuz it is full of protein, fat & fiber [the trifecta of a full tummy]!
During #quarantinelife, many of us are turning to carbs & alcohol as a form of stress-management.
There’s a good reason why this works in the short-term… Carbs create serotonin [the “feel-good” chemical that makes us happy & relaxed]. But, long-term? It may lead to weight gain & pre-diabetes.
When carbs hit your bloodstream they quickly turn into sugar, which can make you feel wonderful for about 45 minutes. Once the sugar is gone, your body starts looking for a carb-hit so it can feel good again.
This is why lunch [really] matters… If you eat a lunch that’s at least 40% protein, 30+% fiber & 30% fat, you’ll be full for 4+ hours. In addition, your brain will be more engaged due to the fat/protein content and the fiber will help to quell the cravings.
Here are three key nutrients you need during lunch to keep the afternoon carb cravings at bay. Bonus: You’ll also feel more energized and motivated!
❶ Protein: This will keep you full. Try consuming more eggs, nut butters, and/or add collagen protein to your coffee/tea. Did you know? Two eggs have 12+ grams of protein, which is almost 25% of the RDA!
❷ Fat: This will keep you satiated [aka less tempted by junk foods]. Try adding nuts/seeds to your salad or slice up an avocado and put it on your sandwich.
❸ Fiber: This will give your stomach a workout. Fiber slows down how quickly food moves through your gut. If your gut is working on food, it won’t want to keep eating food. 🙌 Try adding beans to your diet. They’re a fantastic source of fiber & protein.

😋 High-Energy Avocado Eggs 😋
❥ 2 tsp avocado oil or ghee [I ❤️ @ancientorganics]
❥ 1 sliced red bell pepper [sliced]
❥ 1 large garlic clove [sliced]
❥ 2 large eggs
❥ 1 can black beans [I ❤️ @swbeans]
❥ ½ cup cherry tomatoes [chopped]
❥ ¼ tsp cumin seeds
❥ 1 small avocado [sliced]
❥ 1 handful fresh cilantro [chopped]
❥ 1 lime [cut into wedges]
❶ Heat the oil on medium in a large sauté pan.
❷ Add pepper, tomatoes & garlic. Cook for 1-2 minutes.
❸ Add black beans with some of the juice and continue heating for about 1 minute.
❹ Sprinkle the mixture with cumin. Push the bean mixture aside and crack your eggs into the pan.
❺ When the eggs are cooked to your preference, pull off the stove and add you avocado, cilantro and squeeze of lime.
