Immune Boosting Salad — And, So Good

Immune boosting salad? Coming right up! ✅

Many things can impact our immune system. Food, of course, plays a huge part… Along with sleep, hydration and managing stress levels [hint, hint, “don’t panic.” 😉].

I love this salad because it’s full of immune boosting antioxidants, fiber AND it’s very filling. I had it last week when I was in San Diego at @eatflowerchild and this is my immune boosting version of it:

RECIPE:

⦿ 1 cup chopped romaine 🥗

⦿ 1 cup chopped Napa cabbage [It’s high in antioxidants and fiber. P.S. It looks like romaine…😉… so no one needs to know…]

⦿ 1 sliced bell pepper (Psst… More #VitaminC than an orange] 

⦿ ½ cup of chopped broccoli [Equip w/immune boosting antioxidants] 🥦

⦿ 1 chopped green onion 

⦿ 1/3 cup sunflower seeds [Which are high in #VitaminE and helpful in preventing upper respiratory infections]

⦿ 1 cup cooked quinoa [I ❤️ the Kirkland Signature pouch, aka @costco… ready in 90 seconds!]

⦿ I added skirt steak as a protein, but you could also just increase the sunflower seeds to keep it vegan or vegetarian. 🥩

Here’s the magical dressing that I’ve been trying to knock off all week. [I finally nailed it on attempt #4 😂]

Avocado Lime Dressing:

In your blender, add:

⦿ 1 large avocado 🥑

⦿ ¾ cup water 💦

⦿ 2 tbs lime juice 

⦿ 1 [finely chopped] clove of garlic

⦿ 1 tbs apple cider vinegar 🍎

⦿ 1 tsp onion salt 

⦿ 1 tsp chopped parsley

⦿ Sprinkle garlic powder 

⦿ Sprinkle red pepper flakes

⦿ ¼ tsp @everything_but_the_bagel seasoning [via @TraderJoes]

⦿ Salt & pepper [to taste]

Blend and then slowly drizzle in ½ cup @thrivemarket olive oil. Too thick? Just add a bit more water.
