Food Prep Fri-Yay!
While I don’t actually food prep on Friday, I wanted to get this recipe to you so you’d be ready to go for your weekend food prep.
One of the items I make every Sunday is some kind of hearty roasted veggie or bean salad. First up…
❤️ Pickled Beet Salad ❤️
- 1 pound beets [about 2 bunches greens removed, and trimmed]
- 1 clove garlic [crushed and peeled]
- 3 tablespoons virgin olive oil [extra-]
- 2 tablespoons red wine vinegar
- 3/4 teaspoon salt
⓵ Place beets in a 3-quart saucepan and cover with cold water.
⓶ Bring to a boil over high heat. Reduce heat to medium-low and simmer until the beets are tender and a fork inserted comes out easily, 40 to 55 minutes.
⓷ Drain and cool beets until cool enough to handle.
⓸ Whisk garlic, oil, vinegar and salt in a medium bowl.
⓹ Peel and slice beets.
⓺ Add to the dressing, and toss to coat.
⓻ Cool beets completely in the dressing.
How I Use It [Weekly!]:
😋 Just beets, with a sprinkle of goat cheese.
😋 Beets on top of arugula with a crumble of goat cheese on top and sprinkle on a few pumpkin seeds for protein. [You could certainly add more protein by using some rotisserie chicken but the pumpkin seeds pack a strong nutritional punch and provide amount].
😋 Sliced on top of a hearty grain, such a quinoa.
⭐️ You should consider adding them to your diet [even though they taste like dirt] KIDDING! But I will admit… as a teenager, I vowed to move out and never eat them again. Suffice it to say we have mended our relationship. 😂
⭐️ They’re high in fiber and antioxidants, and help to support detoxing the body. Beets are now being studied regarding cancerous tumor growth. The results are looking promising on beet’s impact on breast, prostate, lung and stomach tumors. Yellow beets have a good hit of lutein, which is so supportive of eye health.
