Just “Beet It” Brownies

JUST “BEET-IT” BROWNIES

~makes about 12-14 brownies

¾ cup Gluten Free Flax Flour (any GF flour works well)

¾ tsp. baking powder

½ tsp. salt

¾ cup of dark chocolate chips (I actually used a dark chocolate bar from Trader Joe’s)

12 oz. cooked beets, drained and puréed (I use LOVE BEETS brand and then pureed them in my VitaMix)

½ c. brown sugar, packed

¼ c. unsweetened cocoa powder

1 tbsp. soft butter or coconut oil

1½ tsp. plain nonfat Greek yogurt

¼ c. unsweetened applesauce

2 tsp. vanilla extract

 

1. Preheat oven to 350° and lightly coat an 8” square baking pan with nonstick cooking spray.

2. In a medium bowl, whisk together the GF flour, baking powder, & salt.

3. Add the chocolate chips or broken pieces of dark chocolate bar to a separate microwave-safe bowl. Microwave for 20-30 second intervals, stirring after each, until the chocolate melts (about 1 to 1½ min). Stir in the beet purée and next 6 ingredients (through vanilla), mixing thoroughly. Add in the flour mixture, stirring just until incorporated.

4. Pour the batter into the prepared pan, and bake at 350° for 35-40 min or until firm. Cool completely before slicing.

5. ENJOY!

    Hi,
    This sounds like a good idea except for the flax seed. Flax has a very negative affect on the thyroid and weight loss. But I would just put in some almond flour instead. My question is how many calories or carbs would be expected in this recipe?
